I Made the Dessert!

My husband and I were invited for dinner and I asked what I could bring.  They said, "bring a dessert."  Well, I asked my  hubby what I should make and in one second he said Pumpkin Pie Cake.  This seems to be a family favorite of ours.

It turned out so pretty!



Here is the recipe.  I think I have shown it before, but I will show it again...

Grease 13x9 cake pan
Preheat oven to 350 degrees

1 Yellow Cake Mix (reserve 1 cup of mix in a separate bowl)
1 egg
1/2 stick melted butter or margerine

Mix and press mixture into the cake pan going up a little on the sides.

1 can Libby Pie Mix
2 eggs
2/3 c. evaporated milk

Mix together and pour over batter in cake pan.

1 cup of reserved mix
1/2 stick softened butter or margerine
1 t. cinnamon
1/2 c suger

Mix and crumble on top of Pumpkin batter.  Bake for 50 mins.  Cool and refrigerate.

I top mine with Cool Whip, but it would be yummy with real Whipped Cream.

I also have seen some recipes add chopped pecans to the crumble...haven't tried that, because this is the way my Mom made it!


Ok...just to add that the whole cake is gone...like in 5 minutes!  My husband said, "why is the pan clean?"  I wanted another piece....Too late!
